TERROIR I Cata Chile 01: ChiIlan Viejo, Region del 1310 Ego, Valle del Itata, Chile I Manual harvest with cluster selection. Fermentation in stainless steel tanks for 20 days at low temperature. Matured over fine less for twelve months. Winemaker: Eduardo Strechar.
What does this wine taste like?
Pineapple, pear…
Flowers and honey
Aroma: Standing out pineapple, pear and a light touch of cereals, with notes of white flowers and honey. Complex and extremely pleasant aroma with a lot of typicality of the variety.
Pairing: goes very well with seafood, white meat and light sauces.

CATA Cinsault Syrah
Region del Bio 131o, Chile. Cata Chile 01 [20%]: ChiIlan Viejo, Nuble, Region del Bo 131o, Chile. i Manual harvest with cluster selection. Prolonged alcoholic fermentation (30 days) carried out individually for each variety in foudres at low temperature. Malolactic fermentation and maturation in 600It French oak barrels -18 months. Winemaker: Eduardo Strechar.
What does this wine taste like?
Blackberry
Raspberry
Aroma: Good aromatic intensity, with notes of blackberry, raspberry, the peppery side of syrah appears very elegant and brings complexity
Pairing: red meat, duck, with sauces that may be a little more spicy.

CATA Pinot Noir
TERROIR Cata Chile 01: ChiIlan Viejo, Region del No 131o, Valle del Itata, Chile I Manual harvest with cluster selection. Prolonged alcoholic fermentation (28 days) in wooden foudre at low temperature. Malolactic fermentation and aged in 228 It. French oak Marssanay barrels -12 months. Winemaker: Eduardo Strechar.

Vanilla
Aroma: Great aromatic intensity, highlighting notes of red fruits such as cherry and raspberry, a discreet floral touch of hibiscus, finishing with dark chocolate and vanilla.
Pairing: Mushroom risottos, Boeuf Bourguignon, roasted vegetables, goat cheese, brie and camembert.
